Airlocks and Bungs: Three-Piece vs. S-Shaped

Of everything on a brew day, the airlock is the cheapest part that does the most quietly important work. It's a dollar or two of plastic, it sits on the fermenter for two weeks doing something you barely glance at, and yet it's the one piece standing between your beer and every mold spore and fruit fly in the room. I've run the same two styles for years, cracked a couple of lids along the way, and learned the hard way that the airlock is only ever as good as the bung sitting underneath it. Here's how the pieces actually fit together, and which one to reach for.

What an airlock is actually doing

An airlock is a one-way valve made out of water. The American Homebrewers Association describes the job plainly: an airlock "allows carbon dioxide, a byproduct of fermentation, to escape the fermenter without letting contaminants in" (homebrewersassociation.org). That's the whole trick. Fermenting yeast throws off a steady stream of CO2, pressure builds inside the sealed vessel, and the gas pushes out through a small pool of liquid as bubbles. When fermentation slows, the pressure equalizes and the liquid seal simply sits there — blocking the return trip so outside air, wild yeast, and bugs can't wander back in. No electronics, no moving parts to fail, just a water trap that only opens one direction.

Understanding that is what tells you when something's wrong. A dry airlock is an open door. If the liquid evaporates out over a long fermentation, or you knock the fermenter and slosh it empty, the seal is gone and the one-way valve becomes a two-way hole. Checking the fluid level is a ten-second habit worth building.

Three-piece airlocks: easy to read, easy to clean

The three-piece is the one that looks like a little plastic tower: a base tube that pushes into the bung, a floating inner cap, and a vented outer cap that sits on top. Gas lifts the inner cap slightly and slips out the vents. I default to these for one reason — they come apart. When a batch finishes and there's sticky residue or a bit of blown-over krausen inside, you pull the three pieces apart and they clean in seconds. The clear straight tube also makes the fluid level obvious at a glance, so you never have to guess whether the seal is still there.

The downside is that they don't bubble as dramatically, and if a violent fermentation shoves foam up into one, that floating cap can get gunked or even pop off. But for everyday brewing, the ease of cleaning wins, and a cap that pops is telling you something useful anyway — that you needed a blow-off tube, not a bigger airlock.

S-shaped airlocks: satisfying to watch, a pain to scrub

The S-shaped airlock (sometimes called a twin-bubble) is a bent tube with two little chambers, and you fill it so liquid pools in the bends. Gas has to push through both pockets to escape, which makes each burp a visible, audible bloop. There's something genuinely reassuring about watching one chug away on brew night, and a lot of brewers love them for exactly that feedback.

My gripe is cleaning. The whole thing is one sealed bent piece, so when foam blows into the bends you're stuck flushing it out with a syringe or a long soak — you can't just take it apart. On a batch with heavy carryover, that's a genuine annoyance. I keep a couple around for the visual, but they're not my daily driver.

The bung is half the seal

People obsess over which airlock to buy and forget that it's useless without a good fit into the fermenter. That fit is the bung — the rubber stopper the airlock stem pushes through. Bungs come in numbered sizes, and the number that fits depends entirely on your vessel: a common glass carboy neck often takes a #6 or #6.5 drilled stopper, while a wide-mouth bucket lid uses a molded grommet instead. Drilled bungs have a hole for the airlock; solid ones don't, and you'll want one solid stopper around for sealing a vessel during cold crashing or transport.

Two failure modes are worth naming. First, a bung that's slightly too small will look seated but slowly work loose as CO2 pressure nudges it, and one morning you'll find the airlock tipped sideways and the seal broken. Size up if it isn't snug. Second, on plastic bucket lids the weak point usually isn't the airlock at all — it's the lid gasket. If the lid isn't fully pressed down all the way around, gas escapes around the rim instead of through the airlock, and you'll swear fermentation never started. Seat the whole lid before you blame the airlock.

What to fill it with, and how much

Fill the airlock to the line printed on it — usually halfway up the chambers — with a sanitizing liquid, not plain tap water. I use a splash of no-rinse sanitizer at working strength; cheap vodka or any high-proof neutral spirit works too. The logic is simple: if that liquid ever does get sucked back into the beer during a temperature swing or a botched cold crash, you want it to be something harmless rather than a pool of unsanitary water. Don't overfill, or an energetic fermentation will blow the fluid straight out the top.

When the airlock does nothing, and why that's usually fine

Here's the mistake nearly every new brewer makes: treating airlock bubbles as the fermentation gauge. They aren't. A quiet airlock can mean a leaky lid venting elsewhere, a fermentation that's already finished, or a slow, cool ferment that simply isn't producing gas fast enough to bubble visibly. None of those are emergencies. The only instrument that actually tells you whether fermentation happened is a hydrometer reading dropping over a few days. If you find yourself staring at a still airlock and worrying, stop watching the plastic and pull a gravity sample instead.

Blow-off tubes: when an airlock isn't enough

Some beers ferment so hard in the first day or two that krausen climbs right up and tries to exit the fermenter. Cram an airlock onto that and it clogs, pops, or launches foam across the room. The fix is a blow-off tube: instead of an airlock, you push a length of tubing through the bung and drop the other end into a jar of sanitizer. It keeps the same one-way water seal but gives the foam somewhere to go. I rig one whenever headspace is tight or I'm pitching a notoriously vigorous yeast, then swap back to a regular airlock once the violence settles after a few days.

What I keep on the shelf

Two or three three-piece airlocks as the workhorses, one S-shaped for when I want the show, a couple of solid stoppers for cold-crashing and moving vessels, and the right drilled bung sizes for each fermenter I own — plus a spare of the size I use most, because they're a dollar and they always vanish when you need one. A short length of blow-off tubing lives in the same drawer. That covers every fermenter I'll ever seal, costs less than a single six-pack, and means a cracked lid or a lost stopper never turns into a delayed brew day.
