When I made my first cider, I pitched a packet of leftover ale yeast because it was in the fridge, and the result was fine — a little sweet, a little cloudy, drinkable. It took a few more batches to realize how much of a cider's character is decided the moment you choose the yeast, before the juice even starts working. The yeast sets how dry it finishes, how fast, how cleanly, and how much the apple gets to speak for itself. Here's how the three families I actually use compare, and how to match one to the cider you're after.
Why yeast choice matters more in cider than in beer
Beer wort is a rich, buffered soup of malt sugars, proteins, and nutrients, and a lot of yeast strains will chew through it happily. Apple juice is thinner and simpler — mostly fructose and glucose, low on the nitrogen yeast needs, and acidic. That leaner environment means the yeast has less to hide behind, so its personality shows up more directly in the glass. It also means a strain's alcohol tolerance and its appetite for fully fermenting simple sugars matter a great deal, because those two traits decide whether you end up with a bone-dry cider or a stalled, sweet one.
Ale yeast: fruity esters and a softer finish
A clean ale yeast is the most forgiving place to start, and it's what I still reach for when I want a rounder, more approachable cider. Ale strains tend to leave a touch more body and throw off fruity esters that read as fresh and juicy rather than austere. They also usually stop a little short of bone dry, so the cider keeps a whisper of perceived sweetness without any effort on your part.
The tradeoffs: ale yeast tolerates less alcohol than wine or champagne strains, so it's not the pick for a high-gravity cider, and it flocculates and drops less compactly, meaning you may wait longer or work harder to get a bright glass. For a standard-strength, everyday cider though, an ale strain gives you the friendliest result with the least fuss.
Wine yeast: clean, dry, and true to the apple
Wine yeasts sit in the middle and are, for my money, the sweet spot for cider. They ferment cleaner and drier than ale yeast, tolerate more alcohol, and tend to let the fruit's own aromatics come through rather than layering on much of their own. A general-purpose wine strain will take a typical apple must most of the way to dry while keeping delicate apple and floral notes intact. If you want a cider that tastes distinctly of the juice you started with — not of the yeast — this is where I'd point you.
They also settle better than most ale strains, so clearing is easier, and they handle the acidity of apple must without complaint. The one thing to watch is that "dry and clean" can tip into "thin" if your juice was already lean, which is where blending apples or adjusting the must matters more than the yeast itself.
Champagne yeast: bone-dry and nearly bulletproof
When I want a crisp, sparkling, wine-like cider that ferments no matter what, I reach for a champagne strain like Lalvin EC-1118. It was isolated from Champagne fermentations and is built for exactly the hostile conditions cider can present. Its published specs make the case: it ferments across a very wide range, roughly 10 to 30 C (50 to 86 F), and carries an alcohol tolerance up to about 18%, with the manufacturer explicitly recommending it for cider and sparkling wines (Lallemand, lallemandbrewing.com).
That robustness is the appeal and the catch. A champagne strain will drive a cider to bone dry and won't stall on you, which is exactly what you want for a sparkling, crisp result — but it's so efficient and neutral that it can strip out the softer apple character and leave something closer to a dry sparkling wine than a fruity cider. That's a feature if crisp and dry is the goal, and a bug if you wanted the apple front and center.
Matching the yeast to the cider you want
The BJCP's description of a New World cider is a useful north star here: "a refreshing drink of some substance – not bland or watery," clear to brilliant, with medium-to-high acidity and some tannin, where dry versions turn "more wine-like with some esters" (bjcp.org). Read that carefully and you can almost pick your yeast from it. Want it rounder and fruitier with a hint of sweetness? Ale yeast. Want it dry, clean, and expressive of the apple? Wine yeast. Want it bone-dry, crisp, and headed for sparkling? Champagne yeast. There's no single correct answer — there's the cider you want, and a strain that gets you there most reliably.
Temperature is part of the yeast decision
Whatever family you pick, ferment on the cooler end of the strain's range. Cider fermented warm tends to blow off delicate apple aromatics and can pick up harsher, hot notes, while a cool, slow ferment preserves the fruit. A basement corner in the 60s Fahrenheit is close to ideal for most cider. This is also why alcohol tolerance and temperature range are worth checking on the packet before you pitch: a strain that shrugs off a wide temperature band, like the champagne yeast above, gives you a lot more room for error in an unheated space than a fussier one.
Nutrients: the step cider makers skip
Here's the mistake that gets blamed on yeast but usually isn't the yeast's fault. Because apple juice is low in the nitrogen yeast needs, a fermentation can crawl, stall, or throw off sulfury off-flavors — not because the strain was wrong, but because it was starved. A small dose of yeast nutrient added early, following the product's rate for cider or wine, prevents most stuck and stinky fermentations regardless of which family you chose. No strain, however bulletproof, performs well on an empty tank. If you take one habit from all of this, make it feeding the yeast, not agonizing over the packet.
What I reach for, batch to batch
For an easy, sessionable cider with a friendly edge of sweetness, I pitch a clean ale yeast and ferment it cool. For a cider meant to taste of the fruit — the one I'm proudest to hand someone — a general-purpose wine yeast is my default. And when I want something dry, crisp, and sparkling, or I'm working with a high-sugar juice that needs a tolerant workhorse, the champagne strain never lets me down. Keep one of each in the fridge, always add nutrient, ferment on the cool side, and you can steer nearly any jug of juice toward the cider you actually had in mind.
