People are often surprised to learn kombucha contains any alcohol at all, and then more surprised to learn a home batch can contain noticeably more than the bottle they buy at the store. It's a fair thing to wonder about — especially if you're brewing in a house with kids, if someone's avoiding alcohol entirely, or if you're just curious what you've actually made. The short answer is that all kombucha is mildly alcoholic by nature, most of the time it's a trivial amount, and a few specific brewing choices can push a home batch to where the number stops being trivial. Here's how that works and how to steer it.

Where the alcohol comes from

Kombucha ferments through a partnership: the yeast in your SCOBY convert sugar into alcohol and carbon dioxide, and the bacteria then convert much of that alcohol into the acids that give kombucha its tang. Alcohol isn't a contaminant or a mistake here — it's a normal intermediate step, produced by the yeast and mostly consumed by the bacteria as the batch matures. Because the two organisms are working at slightly different rates, there's always some ethanol present at any given moment, sitting between what the yeast has made and what the bacteria have not yet converted. That's why even a perfectly ordinary batch is never truly at zero.

How much is actually in a typical batch

For a normal first ferment that you taste, catch at the balance point, and refrigerate, the alcohol is usually low — commonly well under 1%, often in the tenths of a percent. Commercial kombucha sold on ordinary grocery shelves is formulated and tested to stay below a specific line (more on that line below), which is why it can be sold as a soft drink. Home kombucha isn't held to any recipe or test like that, and the conditions that keep the number low in a controlled facility are exactly the ones that drift at home: longer ferments, warmer rooms, and sealed bottles. So a home batch spans a wider range, and some batches land meaningfully higher than the store version you might be picturing.

The 0.5% line, and why it's the number to know

There's a specific threshold worth knowing, because it's the one regulators use. In the United States, the Alcohol and Tobacco Tax and Trade Bureau (TTB) treats a beverage as an alcohol product once it reaches 0.5% alcohol by volume. As the TTB explains on its kombucha guidance page, if kombucha is 0.5% ABV or more — at any point during production, when bottled, or even after bottling due to continued fermentation — it's an alcohol beverage subject to federal alcohol rules. That last clause is the important one for us: a batch can test under 0.5% when sealed and then climb past it in the bottle as fermentation quietly continues.

You are not a commercial producer, so this isn't a compliance problem for a home brewer making kombucha for personal use. But the 0.5% figure is still the right mental benchmark. It's the line above which a drink is meaningfully alcoholic rather than trivially so, and knowing your batch can cross it is what lets you make sensible calls — about who drinks it, when, and how long you let it go.

Brewer's Note Treat a long-fermented or heavily carbonated home batch as mildly alcoholic by default, not as a guaranteed soft drink. That's the responsible assumption for serving it to children, to anyone who's pregnant, or to anyone avoiding alcohol for health, religious, or recovery reasons — when in doubt, pour them a fresh, short-fermented batch or something else entirely.

What pushes a batch higher

A handful of factors reliably raise the alcohol, and they tend to stack. A longer first ferment gives the yeast more time producing ethanol; a warmer kitchen speeds the whole culture up; and more starting sugar simply gives the yeast more fuel. The biggest single lever, though, is the second ferment. When you bottle with added sugar or juice and cap it tightly, you create a sealed, low-oxygen environment — and yeast favor alcohol production when oxygen is scarce, while the acid-forming bacteria, which prefer oxygen, slow down. So a long, sugary, sealed second ferment in a warm room is the classic recipe for a batch that's fizzier and stronger than you expected. A yeast-heavy culture, with lots of the stringy brown strands, tilts the same direction.

Keeping the alcohol down

If a low-alcohol drink is the goal, the same levers work in reverse. Keep the first ferment on the shorter side and taste early rather than letting it run for weeks. Ferment in a cooler spot rather than the warmest corner of the kitchen. Go easy on the sugar you add for a second ferment, and keep that second ferment short — a day or two of bottle time for carbonation, then straight into the fridge, since cold slows the yeast to a crawl and effectively freezes the alcohol level where it is. Refrigerating promptly instead of leaving bottles at room temperature for a week is probably the easiest single habit that keeps the number modest.

Can you measure it at home?

Not easily, and it's worth being honest about that. A hydrometer, which works well for beer or wine, gives unreliable alcohol readings for kombucha because the residual sugar and the substantial acidity both throw off the density the tool depends on. Alcohol test strips made for kombucha exist and can give you a rough ballpark, but they're approximate, not laboratory-grade. Precise numbers really do require lab testing, which is how commercial producers verify their products. For a home brewer, the practical move isn't to chase an exact percentage — it's to recognize which of your batches are the high-alcohol kind based on how they were made, and treat those accordingly.

Brewing it responsibly

Making kombucha at home for your own use is a normal, legal thing to do, and the alcohol in most well-managed batches is genuinely minor. The point isn't to worry — it's to stay aware. Assume your longest, warmest, most heavily carbonated batches carry the most alcohol, keep those away from anyone who shouldn't be drinking any, and lean on short ferments, cool storage, and prompt refrigeration when you want the number low. Know that 0.5% is the line where a drink stops being trivially alcoholic, understand that a bottle can drift across it on the counter, and you can brew with confidence instead of guessing.
