Measuring Cider Acidity: Titratable Acid, pH, and When to Adjust

My second season I made five gallons from a farm-stand jug that fermented beautifully and tasted like nothing at all. Stable gravity, clean nose, no fault I could name — just flat and dull, the way apple juice tastes after a night on the counter. So I got out the jar of acid blend and started spooning it in, tasting after each addition. By the fourth the batch had gone from dull to sour without stopping anywhere pleasant in between. The real problem wasn't the spooning. It was that I never knew where the juice started, so I had no way to know where I was headed.

Two different questions about the same juice

pH and titratable acidity both get called "acidity", and they answer separate questions. pH reports how strong the acid is right now — the concentration of free hydrogen ions loose in the juice — and that is the number microbes care about, which makes it a stability question. Titratable acidity reports how much acid is present in total, dissociated or not, and that is the number your tongue reports back as tartness.

The reason one won't substitute for the other is buffering. Apple juice carries potassium salts that quietly mop up free hydrogen ions, so a juice can hold a fair amount of total acid while still reading a mild pH. Two jugs from two orchards can share a pH and taste noticeably different, because one of them simply has more acid in it. Measuring only pH tells you whether your batch is defensible; measuring titratable acid tells you whether it will be worth drinking.

The numbers worth writing on the carboy

The Beer Judge Certification Program's cider-making material gives both targets in plain figures, and they are the ones I work to. On pH it says it is generally desirable for ciders and perries to be within a pH of 3.3 and 3.8 at the beginning of fermentation, that anything above 4.0 could be at risk of contamination, and that anything below 3.1 ends up too acidic and tasting too sharp. On total acid it puts the useful starting zone at 5 to 7 grams per liter as malic acid.

Then it says the sentence that cost me that first flat batch: there is a relationship between pH and TA, but in fruit juice the relationship is not accurate enough to calculate one from the other, so measuring the juice with an acid titration kit is advised. If you want both numbers, you take both readings.

What titration actually does on a kitchen counter

The wine-supply acid test kit costs about what a good bottle of cider does and has three parts: a syringe of sodium hydroxide solution at a known strength, a dropper of phenolphthalein indicator, and a small vial. Measure a fixed volume of juice, add a couple of drops of indicator, then push the hydroxide in drop by drop while swirling, until the sample turns pink and holds pink for a slow count of thirty. How much hydroxide that took is proportional to the acid in the sample, and the kit's instructions turn the reading into grams per liter.

Two practical wrinkles bite everyone the first time. Fresh-pressed juice is cloudy and brown, which makes a faint pink endpoint nearly invisible, so dilute the sample with an equal measure of distilled water first — dilution changes the concentration but not the amount of acid, so the arithmetic still works out. The second is the scale the kit is calibrated to. Most were built for grape wine and report results as tartaric acid, but apples are a malic-acid fruit, and malic has the smaller equivalent weight of the two. Multiply a tartaric-scale reading by roughly 0.89 to state it as malic. Skip that and you will think the juice is about a tenth more acidic than it is, which is exactly the size of error that leads to over-correcting.

Why I still keep a meter next to the kit

Titration gives me the flavor number and the meter gives me the safety number. A cheap pocket meter wants calibrating against buffer sachets before every session and its probe kept wet between them, which is more fuss than test strips — but strips cannot resolve 3.3 from 3.8, and that span is the whole difference between a juice I will pitch as-is and one I won't. If the meter says 4.1, I am adjusting before yeast goes near the vessel.

Raising acid: juice first, jar second

When a juice comes in low, my first move is other juice rather than powder. Something sharp blended in brings acid along with tannin, aroma, and sugar, so the batch gains structure instead of just sourness — the notes on which apple varieties actually matter cover picking the sharp component. The BJCP points the same way, listing juice from higher-acid apples or pears alongside malic, tartaric, or citric additions.

When blending isn't available, malic acid powder is straightforward arithmetic: a gram per liter raises a malic-scale reading by about that same gram per liter. Five gallons is roughly nineteen liters, so a half-gram-per-liter step is about nine and a half grams — a couple of level teaspoons, which is precisely why you weigh it rather than spoon it. Dissolve the addition in a little juice, stir the vessel, wait a few minutes, then re-titrate. Two small steps with a reading between them land closer than one confident step.

Brewer's Note The sodium hydroxide in an acid test kit is caustic. It is dilute and it is a small volume, but it will sting badly in an eye and it will ruin a shirt, so work over the sink, keep it capped, and keep it labeled and away from anywhere it could be mistaken for something drinkable. Rinse the vial and syringe with clean water after every use, because dried hydroxide residue in a syringe barrel will throw your next reading. And treat the sample as spent — never tip a titrated or indicator-dosed sample back into the batch.

Lowering acid is the harder direction

Coming down is awkward, which is the best argument for creeping up carefully. Diluting with water drops the acid but thins the sugar, tannin, and flavor along with it, and blending in a sweet juice does the same more pleasantly. Calcium carbonate neutralizes acid chemically, and it can leave a chalky, faintly salty edge I dislike more than the sharpness I was fixing.

The gentlest route is biological. Malolactic fermentation converts malic acid into the softer lactic acid and can cut perceived sharpness substantially, which is one more reason to let a batch sit in bulk where that conversion has somewhere safe to happen — what changes after month three gets into how it plays out. But it takes months and isn't under your control, so allow for it rather than schedule it.

Measure the juice, not the finished cider

Take the readings before you pitch. Fermentation consumes sugar rather than acid, so the total acid in a finished cider is close to what you started with, while perceived tartness climbs steeply as the sugar that was masking it disappears. A juice that tasted balanced sweet will taste sharp dry, and that is not the acid changing — it is the sugar leaving. It also means backsweetening moves perception without moving the measurement, so adding sweetness back rebalances a cider you already made rather than fixing a juice you haven't fermented.

One more reason to check early: a juice acidic enough to sit under pH 3.1 puts real stress on yeast, so a sluggish start on a very sharp batch belongs alongside the usual suspects in why a batch stops fermenting.

My twenty-minute juice check

The routine is short enough that I no longer skip it. Juice goes in the fermenter and gets a good stir, then I pull one sample for the hydrometer, one for the meter, and one for the kit. Read the pH, dilute the titration sample with distilled water, run it to a pink that holds. Convert to a malic figure, write all three numbers on masking tape on the vessel, and only then decide whether anything needs adjusting.

If the pH sits between 3.3 and 3.8 and the acid lands in the 5 to 7 grams per liter window, I pitch and leave it alone. If either is outside, I fix it while it is still juice, in measured steps, re-reading after each one. Twenty minutes and three lines of writing is the difference between adjusting a batch and guessing at one.
