For my first three cider years I never touched a whole apple. I bought jugs, pitched yeast, and got perfectly good cider out of it. Then a neighbor offered me everything under her tree if I'd haul it away, and I said yes without any idea what I'd signed up for. That afternoon forced me to confront a number I'd never had to think about: how much liquid actually comes out of a pile of fruit. If you're eyeing a free tree or a farm stand's seconds bin, the arithmetic below is what nobody tells you in advance.
What a press day actually involves
Going from fruit to fermentable juice is two distinct mechanical jobs, and beginners almost always underestimate the first one. You have to grind the apples into a coarse, wet mash — the traditional word is pomace, and the verb, wonderfully, is scratting — and then you have to squeeze that mash under sustained pressure. Whole apples do not press. Put a bucket of intact fruit under a press and you'll get bruised apples and a spoonful of juice, because the cell walls holding the liquid never rupture. Nearly every disappointing home yield I've heard about traces back to shortcutting the grind.
The gear splits along the same line. A grinder or scratter handles stage one; a basket or rack-and-cloth press handles stage two. You can improvise stage one with a heavy-duty food processor working in small batches, and plenty of people do. Stage two is harder to fake, though cloth-wrapped pomace under a car jack braced against a wooden frame is a real solution that real people use.
The bushel math I plan around
Here's the anchor I wish I'd had on that first afternoon. Michigan State University Extension, in its guide to pressing apple cider at home, puts a bushel of apples at roughly three gallons of juice (canr.msu.edu). A bushel is somewhere in the forty-to-fifty-pound neighborhood depending on the fruit and who filled the crate, so you're extracting a bit under a gallon for every fifteen pounds you carry.
My own logbook runs slightly under that. With a hand-cranked scratter and a small basket press I average closer to two and a half gallons a bushel, which I put down to a coarser grind than a farm operation manages. If you want a five-gallon carboy filled, you are shopping for two bushels, not one, and you'll want somewhere to sit down halfway through.
Condition moves the number too. A soft, mealy apple gives up juice more grudgingly than a crisp one, because the mash turns to paste instead of staying granular. That's no reason to be precious about fruit — windfalls and cosmetic rejects make excellent cider — but it does mean your first press day should be a measuring exercise, not a batch you've already promised to somebody.
Grinding is where the yield is won or lost
The texture you want out of the grinder is coarse crumbs, roughly the size of a corn kernel, wet and loose. Too coarse and whole chunks survive with their juice still locked inside. Too fine and you've made applesauce, which sounds like it should press beautifully and does the opposite: fine particles pack into an impermeable plug and the liquid can't find a channel out. That failure mode is genuinely counterintuitive, and it's why food processors can underperform a crude hand mill. A processor happily overshoots into purée.
Wash the fruit first, cut out anything rotten, and don't bother peeling or coring — skins carry useful tannin and the seeds pass through fine. I quarter anything bigger than a tennis ball, and I keep the pomace moving into the press promptly, because it browns fast in air and the oxidation shows up in the glass.
Pressing slow beats pressing hard
My instinct the first time was to crank the screw down as fast as it would go. Wrong instinct. Pressure applied gradually lets juice drain through the mash instead of sealing it, and a slow build genuinely extracts more than a fast one. I now bring the plate down until juice runs freely, then stop and wait a couple of minutes, then advance again — four or five cycles, ten or fifteen minutes total for a basket load.
When the flow slows to a drip, there's a bonus round available. Pull the cake out, break it up by hand, redistribute it in the basket, and press a second time. It's noticeably less juice than the first pass, but it's free, and on a day when you're two gallons short of filling a fermenter that second pressing is what saves the plan.
Fresh juice is not shelf juice
This is the part I take seriously, because raw juice from a backyard press is a different food-safety proposition than a pasteurized jug. Fruit that has been on the ground can carry pathogens, and MSU Extension is direct about the risk of E. coli O157:H7 in untreated cider — its recommendation is that older adults, young children, and anyone immune-compromised drink only treated cider. Their heat-treatment guidance is to bring the cider to at least 160 to 185 F, after which it keeps about a week refrigerated or up to a year frozen.
Sulfite, settle, then pitch
Fresh-pressed juice arrives loaded with wild yeast and bacteria from the skins, and while some cider makers ferment that population on purpose, it's a coin flip until you've got a few batches of experience. My default is the boring, repeatable path:
- Crush and stir in Campden tablets at the usual homebrew rate of one per gallon, which knocks back the wild population without stopping a healthy pitched yeast later.
- Cover the vessel and leave it 24 hours so the sulfite dissipates. Pitching immediately is the classic way to stress a fresh packet of yeast.
- Take a gravity reading while you wait. Backyard fruit varies far more than a commercial blend, and I've seen the same tree swing several points year to year.
- Add yeast nutrient, then pitch. Apple juice is nitrogen-poor, and press-day juice is no exception.
If you'd rather not wait, freezing is the other lever. Pressed juice freezes well, which means a big press day doesn't have to become a big brew day. I've run juice straight into gallon jugs, frozen them, and fermented in February when the kitchen wasn't already full of apples.
Is it worth it against a jug of juice?
Honestly, on cost alone, usually not. If the fruit is free the juice is nearly free, but a serviceable press and grinder run real money, and store juice at a few dollars a gallon takes a long time to pay that back. Rent or borrow before you buy; plenty of orchards and homebrew clubs run community press days in the fall because the gear sits idle most of the year.
What you actually buy with a press day is character. Pressed juice includes tannin and structure that filtered supermarket juice has had stripped out, and the resulting cider has a grip and a length to it that I could never coax out of a jug with additions. That's the reason I keep doing it — not the economics, which are indifferent, but the fact that the cider tastes like a specific tree in a specific October.
How I run a press day now
My routine has settled into something predictable. I plan on two bushels for a five-gallon batch and assume I'll land slightly under three gallons per bushel. I wash and sort everything into two piles, good and compost, before I grind a single apple. I grind to coarse crumbs, press in slow stages, then break the cake and press again. Everything gets written down: fruit in, juice out, gravity. Then it's sulfite, twenty-four hours, nutrient, pitch — or straight into the freezer if life got busy. Start with one bushel and borrowed gear, write down what you get, and one afternoon will tell you whether pressing is a habit you want. Mine cost me a sore shoulder, and I haven't skipped an autumn since.
