I killed a culture with Earl Grey. Not dramatically — no mold, no smell, nothing you'd call a disaster. The batch just came out limp, the new pellicle formed as a patchy translucent skin instead of the usual firm layer, and there was a faint oily sheen on the surface that I spent a while pretending not to notice. The next batch off that same culture was worse. It took me longer than it should have to connect the two facts, because I'd been thinking of tea as the flavor and the sugar as the food. That's backwards enough to be worth an entire article.
The one plant that counts
Black tea, green tea, white tea, and oolong are all leaves from the same plant: Camellia sinensis. What separates them is processing — how much the picked leaf is allowed to oxidize before it's dried — not species. That single fact resolves most of the confusion about what you can brew kombucha with, because every one of those four is the real thing as far as your culture is concerned, and everything sold as "tea" that doesn't come from that plant is a different substrate entirely.
This isn't a folk rule from fermenting forums, either. A 2024 review in the journal Foods on alternative substrates for kombucha-like beverages describes traditional kombucha production as using the sugary infusion of Camellia sinensis leaves — black and green tea — as the mandatory substrate, and classifies drinks fermented from other plant infusions as beverages analogous to kombucha rather than kombucha itself. The distinction lines up exactly with what you see in the jar.
Black, green, and what actually changes in the jar
Within real tea, the choice is mostly about taste and a little about vigor. Plain black tea is the workhorse and what I'd hand anyone starting out: it ferments briskly, builds a thick opaque pellicle, and gives you that familiar amber, slightly malty base that reads as kombucha to most people. Cheap bulk black tea works fine here — this is not the place for the good stuff, since fermentation flattens the subtleties you'd be paying for.
Green tea makes a lighter, grassier brew, and in my jars it ferments a touch faster while producing a paler, thinner pellicle. Both are normal and neither means the culture is struggling. Oolong sits between the two, and white tea makes a subtle batch that costs several times as much for a result most people can't pick out in a glass. Any of them will keep a culture going indefinitely, and if green-only batches feel underpowered over several cycles, blending back toward black settles it.
Herbal infusions make something else
Chamomile, peppermint, rooibos, hibiscus, lemongrass, ginger — none of these come from the tea plant, and none of them are a substitute for it as your base. You can absolutely ferment them; people do, and the results can be pleasant. What you get is that analogous beverage rather than kombucha, and more importantly, a culture kept on herbal infusions alone tends to weaken batch over batch rather than failing all at once. The first cycle looks nearly normal, the second is sluggish, and by the third you're troubleshooting a culture that no longer builds a pellicle.
Hibiscus earns a specific warning because it's the one people reach for most: it's gorgeous, ferments to a shocking magenta, and is aggressively acidic on its own. As the entire base it stacks acidity on a culture already producing plenty, and I've never had a hibiscus-only batch behave predictably. All these herbs have an obvious home instead — the bottle at second fermentation, where they flavor finished kombucha without touching the culture.
The oil problem, which is the real Earl Grey story
Earl Grey is black tea, so it passes the species test — and it still wrecked my culture, because the problem isn't the leaf. It's the bergamot oil sprayed on it. Oils don't dissolve into the brew; they float, and they collect right where the pellicle is trying to form and where the culture needs contact with air. Any tea carrying added oils belongs in the same bucket: jasmine-scented blends, flavored fruit teas, chai blends built on oils, anything where the dry leaf smells strongly of something other than tea when you open the bag.
The tell is usually visible. An oily batch shows a slick or a fine ring on the surface, and the new pellicle comes in patchy, thin, or not at all. Nothing about it is dangerous — I've drunk oily batches and been fine — but the culture takes the hit, and a culture that's been knocked back once takes a couple of clean batches to recover. Plain tea in the jar, flavor in the bottle. That rule costs you nothing and eliminates the whole category of problem.
Loose leaf or bags, and how strong to steep
Both work, and I've used both for years without seeing a difference in the ferment. Bags are convenient and easy to fish out; loose leaf is cheaper per batch and needs a strainer or infuser basket. Either way I pull the tea out before the culture goes in, rather than letting bags steep in the jar for a week — staples and strings are one more thing sitting in the ferment for no reason.
For strength, I use about six to eight grams of tea per gallon of finished brew — near four to six standard bags, or two to three teaspoons of loose leaf. Steep five to ten minutes, dissolve the sugar into the infusion while it's still hot, then let the whole thing come down to room temperature before it goes anywhere near your culture or starter liquid. That last step is the one that matters most: hot sweet tea will kill a culture outright. I steep concentrated in a small volume of hot water and top up with cool filtered water, which cuts the wait from hours to minutes.
Blending to keep both things happy
Once you've got a healthy culture, blending is where the interesting flavors live without any risk to the ferment. A three-to-one black-to-green mix is my default: it keeps the body and vigor of black tea while lifting the finish. Roughly a quarter of the tea weight is also about as far as I'll push a non-tea addition into the base — a little rooibos for sweetness or a small proportion of a spice, always as the minority partner with real tea carrying the batch. The culture never notices, and I've never had a blend at that ratio behave badly.
Anything more assertive than that goes in the bottle instead. It's not a compromise, either: fruit, herbs, ginger, and floral notes all come through more brightly added to finished kombucha than they do after fourteen days of fermentation flattening them out.
My standing tea rotation
I keep exactly two things in the cupboard for kombucha: a bulk bag of plain loose black tea, unremarkable and cheap, and a smaller tin of plain green. Most batches are straight black or the three-to-one blend. Everything else I want to taste — the peach, the ginger, the hibiscus I love the color of — waits for bottling day. That setup has kept one culture productive across dozens of batches.
The rule that keeps a culture alive
If you take one thing from this: read the ingredients on the tea, not the front of the box. You want leaves from the tea plant with nothing sprayed on them, in whatever oxidation style you enjoy drinking. Black for reliability, green for lightness, a blend if you want both, decaf if you must, no oils ever. Everything else — herbs, fruit, flowers — gets its turn at second ferment.
