I once texted a friend a photograph of a kombucha jar at eleven at night with the message "is this it." A cream-colored patch the size of a dime sat on the culture, slightly raised, and I had already decided the batch was finished. It was a fold in a young pellicle catching the kitchen light, and that jar went on to make some of the best kombucha I brewed all spring. I have also kept a jar going a week longer than I should have, telling myself every morning that it was probably fine, so the late-night panic is not baseless. What I lacked for my first two years was a way of looking at a jar that produced an answer rather than a mood.
Five things show up on top, and only one is trouble
Nearly everything that appears at the surface of a first ferment falls into one of five categories, and naming them is most of the work.
- A young pellicle. The new culture starts as a slick, translucent skin at the line where liquid meets air, often in islands that spread and knit together over several days. Early on it can look like a smear of egg white; it thickens into a smooth, rubbery, off-white disc.
- Brown strands and clumps. Ropy tan or coffee-colored threads hanging below the culture, and gritty sediment on the bottom, are yeast doing exactly what you want. They look alarming and they are the single most common false alarm.
- Gas pockets. Carbon dioxide collects under a sealed pellicle and lifts it into bubbles, ridges, and sometimes a dome that presses against the cloth. A lumpy culture is a working culture.
- Stained patches. Dark blotches on the culture are tea and tannin picked up when the pellicle sank, flipped, or brushed the glass. They are flat and part of the skin, not sitting on it.
- Mold. Dry, raised, circular colonies with a fuzzy or hairy nap, resting on top of the pellicle and above the liquid entirely. This is the only entry on the list that ends the batch.
Texture first, then color, then smell
Colors get discussed the most and they are the least reliable signal, because a young pellicle, a film yeast, and a white mold can all read as white in a photograph. Texture separates them, and light separates texture better than a fingertip does.
Tilt the jar under a lamp and look across the surface at a low angle instead of straight down. Anything wet-looking, level with the liquid, and continuous with the skin around it belongs to the culture. Anything dry, standing above the surface, and casting its own small shadow does not. That raised nap is the whole diagnosis. A defined circular edge is the other tell, because pellicle growth spreads in irregular sheets while mold grows outward from a landing point.
Smell comes third and only confirms: a healthy jar is sharp cider vinegar with a bready note underneath, and a moldy one carries something musty and basement-like over the top. What I no longer do is taste a questionable jar to decide. Your palate is not a contamination test, and the one case where the answer matters is the one case where sampling is a bad idea.
Kahm yeast, harmless and still worth chasing off
Somewhere between normal and ruined sits the group of film-forming yeasts that vegetable fermenters know as kahm: a flat, dull, white to cream layer, often wrinkled like the skin on cooled gravy, with no fuzz and no height. It is far more familiar on a jar of pickles than on kombucha, since a properly acidified vessel is an unfriendly place for it, but it turns up on jars that started with too little sour liquid or sat warm and undisturbed for a long stretch.
It will not hurt you. It will make the batch taste faintly of solvent or old bread, and it is a fair prompt to check your acidity, your brewing temperature, and how much finished liquid you carried over. Skim what you can with a clean spoon and rebuild the next batch with a heavier pour of starter. If the same film returns twice running, I retire the culture and pull a fresh one from the hotel.
The discard rule, and why there is no version that saves the jar
Colorado State University Extension's guide to understanding and making kombucha puts the mold case in one sentence and leaves no room to negotiate: if you find fuzzy blue, gray, green, brown, or black mold, discard both the culture and the kombucha, then clean the vessel thoroughly. Not skim, not rinse, not save the healthy-looking half of the pellicle for the next batch.
That completeness is the part homebrewers resist, and I resisted it too, because a two-gallon jar represents a couple of weeks of waiting. The reasoning holds up once you accept that what you can see is the fruiting end of an organism and not its extent. A colony on the surface has been shedding into a liquid you meant to drink, and no home procedure tells you how far in it went. The same guide rests its whole safety case on hygiene and on the starter liquid acidifying the tea to a safe pH before anything else can take hold.
Why a jar goes moldy in the first place
Mold on kombucha is uncommon, and when it happens it traces to a slow start rather than bad luck. The culture wins by acidifying its neighborhood faster than anything airborne can establish itself, so every cause below is the same cause: the pH stayed high too long.
- Not enough starter liquid. I pour a generous two cups of finished, unflavored kombucha per gallon of sweet tea. Skimping here is the most common reason a new jar stalls at a vulnerable pH for days.
- A cold room. The CSU guide names 64 to 79°F (18 to 26°C) as the working band. A jar at 62°F is not ruined, only slow, and slow means a longer window before the acidity protects it. Confirm the drop with a pH strip rather than the calendar.
- Thin tea or shorted sugar. Less to work with shows up as a thin pellicle and a sluggish sour. Real camellia sinensis tea, brewed to strength, is the cheapest insurance here.
- A loose or wrong cover. Tight-woven cotton or a paper coffee filter under a band breathes and still excludes fruit flies. Cheesecloth with visible holes does neither job, and a fly that gets in brings more than itself.
- A rim that never gets wiped. Sticky sweet tea dried on the neck of a jar is a foothold above the acid line. Ten seconds with a damp cloth at every refill.
The two-minute inspection that replaced the panic
This is the routine I run now, and it has cut the number of jars I agonize over to roughly none:
- On day two, lift the cloth and look across the surface at a low angle under a lamp. Day two is early enough that the acid has not finished its work, which makes it the day a problem is worth catching.
- Check the pH on day three or four. A reading under 4.2 means the vulnerable window has closed and you can stop watching for anything but flavor.
- Wipe the rim and re-seat the cover every time you open the jar, and treat the band as part of the seal rather than a decoration.
- If you find something raised and dry, do not photograph it and ask a forum. Dump the batch, strip the jar, and start again from a fresh culture and a strong pour of starter. You will be drinking kombucha again in ten days, which is cheaper than a week of squinting.
Ninety-nine jars out of a hundred are normal, and the hundredth is unmistakable once you look for height instead of hue. Everything else on that surface is the culture telling you it is working.
